Our discovery during this experiment will probably shock you. Add to heat the water, lime juice and sugar over a medium heat, whisking occasionally until the sugar has dissolved and then leave to cool. Add ice generously, and stir or shake (by putting another cup over the top). If desired, strain mixture to remove any lime pulp, although I don’t bother. Taste and see if you need to make tweaks. I can’t tell you how many times I’ve ordered a skinny Margarita with wildly varying results. Over a large cup, squeeze limes, about 2 medium/large, ripe limes.
